Hello Monday! I am committed to making my simple meals on Monday to be meatless and made Vegetable Fried Rice. Fried rice can have added egg or meat if you wish. Every time I make fried rice it is different. One of the keys is to use rice that is not moist. Using left over rice is good, simple and easy to make.
Having Vegan cookies from Insomnia Cookies was a great treat!
Vegetable oil
1 bag frozen broccoli
1/4 c chopped mushrooms
1 carrot sliced finely or grated
2 cloves Garlic
2 stalks spring onions
1 c cooked rice
1/3 c soy sauce
Heat 3 Tablespoons oil. Add garlic and onion (white part of onion). Add all vegetables and vegetables until heated. Stir in rice and soy sauce. Cook 3-4 minutes, stirring occasionally, until throughly heated. Garnish with green part of spring onion and serve.
